One day my partner Brock was in the mood for salad with grilled chicken. We somehow made up the tastiest easy marinade for the chicken.
Here’s how to make a delicious, versatile and easy chicken marinade
For about two boneless/skinless chicken breasts (about 1.5 lb):
- 1 shallot, sliced
- 2 small or 1 large anchovy fillets, chopped
- Small handful of thyme springs (or dried thyme if that’s what you’ve got)
- About 1/2-1 t kosher salt, depending on your salt tolerance
- Few grinds of pepper
- Juice of 1/2-1 lemon; and toss the lemon in there too if you want
- Small glug of soy sauce
- Healthy glug of olive oil
Mix everything in a ziptop bag, add chicken, and shake and smush it around. Leave to marinate for one hour in the fridge. (I’m sure you can go longer, but I wouldn’t go more than 4, though frankly who knows? Try it and report back.) Mix it around and flip it over once or twice if you think about it.
Take chicken out of the fridge 10-20 minutes before cooking with your method of choice.
The possibilities with this are endless. We liked this so much the first time we made it that we made it again three days later, and have made it countless times since. In fact, I’m glad I published this recipe because I personally reference it regularly! This simple and easy marinated chicken works for salads, wraps, grain bowls–you name it.
